I have seen vegetable cakes popping up more and more lately with people claiming not only do you get great taste but also a superior texture. This last weekend the my curiosity got the better of me and I experimented making a Chocolate veggie cake with Chocolate Avocado Icing.
The cake did turn out very
moist tropical (my friend won’t let me say the word moist anymore), but more than anything, the Avocado Icing has become a bit of an awakening. I used one whole avocado, mashed up really well, then added cocoa powder, Icing sugar, a touch of lemon and a pinch of salt, which just heightened the chocolate flavour and it turned out AMAZING. Will definitely be using it again.
It was a total success apart from the crater which appeared after the cake came out of the oven. But like all things that can go wrong in the kitchen, then is always a way to salvage it. Cue in the strawberries in balsamic.
