Tropical Fruit Extravaganza

‘When in Rome, do as the Romans’ they say.

When in FNQ (Far North Queensland) , you EAT FRUIT.

The remnants of afternoon tea (above) show that I have been having a good time. I have had the usuals – Mango, Paw Paw, Banana, Amazing Passionfruit etc.

But I have also had a few rare tropical fruits, Lemonade Fruit, Rosella, Wattle seed, Black Sapote, Fresh Coconut and Mangosteen.

The last of which was a delicious discovery (below).

The Mangosteen is a fascinating little fruit which you peal like
a Mandarin. The fruit itself is white and looks like a bulb of garlic! It has a delicious sweet mango like taste, a new favourite of mine. (below)

The fresh food markets here are what us city folk would call Art Exhibitions.

Dining at NuNu

Barely two minutes out of the restaurant and I have got to share the NuNu experience.

‘One of the best restaurants in australia’ deserves it’s title.

Mind literally blown.

The dessert was the pick of the meal.

Pineapple jelly, candied coconut and tapioca jewel trifle with hibiscus syrup. (see below)

Must be said, the wait staff were amazing.

Happy Easter!

Make your own Hot cross buns this Easter – its easier thank you think!

YOU WILL NEED:
14g dried Yeast
5 cups of Plain Flour
150ml warm Water
200ml Milk
1/2 cup caster Sugar
2tbs Oil
2 Eggs
1 tsp ground Cinnamon
1 tsp ground Ginger
1 tsp ground Nutmeg
1 cup organic Sultana’s
1/2 cup of Jam

Chelsea Bun

You will need-
450g (3 cups) self-raising flour
½ teaspoon salt
45g butter
250ml (1 cup) milk
Filling
60g butter
1/3 cup brown sugar, lightly packed
½ cup sultanas
½ cup currants
60g chopped glace cherries
60g dried apricots
1 teaspoon cinnamon
Glaze
1 tablespoon water
1 tablespoon sugar
1 teaspoon gelatine

Salted Caramel and Chocolate Truffle Layer Cake

You will need-

Ingredients 115g salted butter 225g plain chocolate (70% cocoa) 150ml milk 225g brown sugar 2 tsp vanilla extract 2 large eggs , separated 150ml crème fraîche or sour cream 225g self-raising flour 1 tsp baking powder 1 tbsp sea salt crystals

FOR THE CARAMEL 450g caster sugar 2 tbsp golden syrup 115g salted butter 125ml double cream 2 tbsp crème fraîche or sour cream

FOR THE CHOCOLATE GANACHE 225g plain chocolate (70-80% cocoa solids) 250ml double cream
